The reason people say bless you when you sneeze is because it was a first symptom of the plague. The tradition has just stuck. Not because your heart stops.
We close our eyes when sneeze because they violent force of a sneeze can cause minor haemorrhage or bleeding into the white of the eyes, or even worse a detached retina. It is a myth your eyes would fall out but the eyelid is a protective and cushioning screen to the eye. You cannot sneeze with your eyes open, anyone who says they can is fibbing as it is a safety/ reflex action just like pulling a finger away from a naked flame.
